Easy Chow Mein Recipe

Ingredients

  • 250g egg noodles
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 bell pepper (red or green), sliced
  • 1 carrot, julienned
  • 1 cup cabbage, shredded
  • 1 cup bean sprouts
  • 200g chicken breast or tofu, thinly sliced (optional)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • Spring onions (green onions), chopped, for garnish

Instructions

  1. Cook the noodles:
Boil the noodles according to the package instructions. Drain and rinse with cold water to stop the cooking process. Toss with 1 teaspoon vegetable oil to prevent sticking.

  2. Prepare the sauce:
In a small bowl, mix soy sauce, oyster sauce (if using), sesame oil, sugar, and black pepper. Set aside.

  3. Stir-fry the vegetables:
Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add onion and garlic, sauté until fragrant. Add bell pepper, carrot, and cabbage. Stir-fry for 2–3 minutes.

  4. Cook the protein:
Push the vegetables to one side. Add the remaining 1 tablespoon of oil and stir-fry the chicken or tofu until cooked through.

  5. Combine ingredients:
Add the cooked noodles to the wok. Pour the sauce over the noodles. Toss everything together until evenly coated and heated through (2–3 minutes).

  6. Add bean sprouts:
Toss in the bean sprouts, stir-frying for another minute.

  7. Serve:
Transfer to plates or a serving dish. Garnish with chopped spring onions and serve hot.
